UCP stood for United Cattle Products, a chain of shops and restaurants specialising in oxtail, cow heel and tripe. Tripe is the lining of the animal’s stomach, served on its own, in salad, with onions or in a pie, and sometimes known as Lancashire calamari. 1950-60s were a time of post-war austerity
